When Sting and Trudie Styler want nourishing, healthy and delicious meals, they turn to Joe Sponzo.

Joe, has been the yoga-loving couple’s private chef for over 15 years. And one of his favourite favorite superfoods is teff. This tiny gluten-free grain, which is starting to pop up in health food stores across the country. Especially if there is an interest in vegan diets. Teff is growing in popularity due to its highly valued nutritional benefits.

“Teff is hardly a slacker in the grain world,” Joe says. “It’s right up there with quinoa and millet.” Yet, we do not hear about it as much. Taste is similar as is the texture.

Teff has a history that dates back centuries. It’s native to Africa and Arabia and has been eaten by humans and animals for thousands of years. It first made its way to the U.S. as food for livestock.”

Super cereal

Looking for a new way to power up for your day? Try this vegan Teff Breakfast recipe Joe created for Sting and Trudie on a cold winter’s day. 

Place a half cup of teff in a medium pot with two cups water over medium heat. Add a pinch of salt and stir often. While that’s cooking, make a cashew cream to top your cereal. Add one cup of raw cashews, half cup apple juice, half cup rice or almond milk to a blender and blend until completely smooth. Place cooked teff on one side of a bowl, add your choice of fresh berries, apples or pears to the other side and top with the cashew cream.

“Teff is the smallest grain in the world, but has more nutrients than any other cereal grain. It’s packed with amino acids, protein, calcium and iron.”
