This vegan pumpkin curry soba wrap recipe from Jenné Claiborne of Sweet Potato Soul shows off the delicious savory side of pumpkin. 

Autumn seems to be all about the pumpkin! Everywhere you look a cafe or restaurant is serving pumpkin bread, pumpkin cookies, pumpkin lattes, even pumpkin beer! I’m not complaining. I for one can never get enough pumpkin. Not only is this celebrated vegetable delicious and versatile, it is also full of health promoting goodness. Pumpkin is high in beta-carotene, a super important antioxidant responsible for promoting healthy cell turnover and giving us a bright complexion. Beta-carotene is also important for heart health.  

While I’m happy to eat pumpkin bread all day long, pumpkin also shines in savory dishes. Check out my simple recipe for soba noodle rice paper wraps filled with pumpkin, meaty mushrooms and Thai curry.

Pumpkin Curry Soba Wraps

serves 4

  • 2 cups pumpkin or squash diced
  • 1/2 red onion, sliced
  • 1 clove of garlic, minced
  • 1 1/2 cup mushrooms (I used shiitake and oyster)
  • 1/2 cup coconut milk
  • 1 tbsp Thai red chili paste
  • 1 tsp tamari soy sauce (or more if necessary)
  • 1/2 package soba noodles, cooked and cooled
  • 1 tbsp coconut oil
  • 10 large sheets of rice paper

In a wok or large skillet warm the coconut oil over medium-high heat. Add onions, garlic and pumpkin and sauté until onions are transparent. Add the chili paste and stir, followed by the coconut milk and mushrooms. Cook on medium-low heat for 10-15 minutes, until the pumpkin has softened. Add the cool soba noodles to the curry and season to taste with tamari.
