Looking for a refreshing way to beat the heat this summer? Whip up a Pineapple Vanilla Chia Fresca from Jenné Claiborne. We think it’s perfect as-is or add rum for a great summer cocktail. 

Pineapple and vanilla are a surprising match made in heaven. Add chia seeds to the mix, and you’ve got a super delicious, refreshing, comforting and filling drink in no time. Instead of snacking on chips, trail mix or cookies, try a pineapple vanilla chia fresca for your summertime snack.

Fresh fruit, like pineapple, is loaded with water, vitamins and minerals, all which help to replenish our bodies in the heat. Chia seeds are very popular these days, and for good reason. These tiny little seeds provide impressive amounts of Omega-3s, protein, easily digestible fiber, calcium and iron.

This pineapple vanilla chia fresca only takes a couple of minutes to make, so don’t delay! 

Pineapple Vanilla Chia Fresca

makes 1

  • 2 cups pineapple, cubed
  • ½ vanilla bean, scraped
  • 1 Tbsp chia seeds

Place pineapple and vanilla into a high-speed blender. Blend smooth. Pour into a glass, then stir in the chia seeds. Enjoy!
